The basis for the Domäne's beef production is a herd of Charolais cattle with approx. 260 mother cows. These high-quality mothers, together with 15 breeding bulls, produce approx. 250 calves per year which are born at the Domäne. The male animals are fed until they are ready for slaughter; suitable female animals are used for breeding purposes.
Our animals live in spacious pens with bedded areas.
As of spring 2004, some Glan cows now live on the Domäne. This race is highly threatened by extinction and therefore requires special breeding efforts. The Domäne keeps this race for maintenance breeding and stabilizes their genes by crossing the Glans with the French Villard-de-Lans cows.
The mother cows with their calves and one bull remain on the pastures in the Taunus hills from spring to autumn. Our animals are fed with farm-grown feed that is produced according to organic guidelines. It goes without saying that we use no meat or bone meal and no growth promoters.

This approach to raising cattle, which allows them freedom of movement - even in winter the cattle can go out into the pastures next to the farm - and the natural feed given to the cattle, promote the good health of the animals and thus lead to an excellent meat quality. The male animals are slaughtered in our own slaughterhouse at the age of 1.5 to 2 years at a weight of 700 to 800 kg.
